These Huevos Rancheros took minutes to make. The tomato sauce comes together so fast. Other than that all is required is frying a tortilla, an egg and topping with your favorite cheese! Love this so much.
I love to make a little special breakfast on the weekend. This is so simple thought, why not during the week. The sauce is just fresh roma tomatoes, jalapeno or serrano, onions and garlic.

Huevos Rancheros
Ingredients
- 3-4 roma tomatoes, halved and sliced
- 1/2 onion, halved and sliced
- 1 jalapeno, thinly sliced
- 1 clove garlic, minced
- salt to taste
- 2-4 eggs for frying
- 2 corn tortillas
- Queso Fresco cheese or cheese of your choice.
Instructions
- Add a little oil just to coat the bottom and add the sliced tomatoes, onions, jalapeno and garlic. Cook until soft and has cooked through, about 10 minutes. Season with salt,.
- In a separate skillet add enough oil to toast or fry your corn tortillas until crisp. Remove and set aside. Fry the eggs in the same skillet as you like them. I fried mine a little over medium.
- To serve, place a tortilla on each plate, top with an egg or two, ladle some of the sauce on and top with Queso Fresco cheese or cheese of your choice. Enjoy!
